Happy St. Patty's Day!

Our little ginger top Mackenna got to celebrate her first St Patricks Day yesterday! Whats in a name? Mackenna is an old Irish surname (last name,) and the spelling is adapted from McKenna.
Fun night with friends...
...and family.

I also have a new recipe for you all, that is an EASY treat! Ben crafted the recipe himself, and we have made it a few times now so it has been "perfected."

Cracker Crusted Haddock
  • Melt 1 Stick of butter
  • Brush top of (fresh not frozen) haddock filets with butter (1 lb for two people)
  • Salt and pepper filets
  • In a bowl, mix Ritz crushed crackers and remaining butter
  • Cover fish with cracker mixture
  • Bake haddock at 400 degrees for 20-25 minutes
  • Top with fresh lemon

And if its St Patrick's Day, serve w/ GREEN BEER :-)
