Aunt Becky comes to the States!

This past weekend, Mackenna got to meet her "Aunt Becky," who currently resides all the way over in Australia. She came home with her boyfriend, Michael, and it was a blast to hang out with them again.
I hope a trip to Australia is in our future!

Mackenna's Newborn Photo Shoot

On October 1st, we had Alicia from AllyRey Photography come to our house and take some "newborn photos" with our family. I got the photos back today, and I love how they came out. It'll be hard to choose our favorites to frame for the house.

Cajun Chicken Pasta

It seems like the only thing that I cook is chicken, but I promise you that isn't true. The chicken recipes just seem to be the "hits" that are worth posting for you all to try. This recipe, Cajun Chicken Pasta, was delicious and a cinch to make. Even Ben, who usually cringes at the word "pasta," loved this recipe. 
Note: It was not spicy at all. 

Ingredients
4 ounce linguine pasta  
1 1/2 cups Heavy cream
2 chicken breast halves cut up   
1/4 teaspoon Dried basil
2 teaspoons Cajun seasoning    
1/4 teaspoon lemon pepper
2 tablespoons Butter     
1/4 teaspoon Salt
1 Green bell pepper chopped   
1/8 teaspoon Garlic powder
1/2 red bell pepper chopped     
1/8 teaspoon Black pepper
1 green onion minced   
2 tablespoons Parmesan cheese grated

Preparation
1. Bring a large pot of lightly salted water to a boil. Add linguini pasta, and cook for 8 to 10 minutes, or until al dente; drain.
2. Meanwhile, place chicken and Cajun seasoning in a bowl, and toss to coat.
3. In a large skillet over medium heat, saute chicken in butter until no longer pink and juices run clear, about 5 to 7 minutes. Add green and red bell peppers, sliced mushrooms and green onions; cook for 2 to 3 minutes. Reduce heat, and stir in heavy cream. Season the sauce with basil, lemon pepper, salt, garlic powder and ground black pepper, and heat through.
4. In a large bowl, toss linguini with sauce. Sprinkle with grated Parmesan cheese.

Mackenna's 2 Month Check up

Mackenna is still growing and gaining at a healthy rate. At her two month appointment, she weighed in at 10 lb 14 oz (2 1/2 lbs gains from her birth rate) and is now 24 inches long. She is still in the 50th percentile for both her weight, but now in the 90th percentile for her height. She's a long little girl. The pediatrician noticed that one of her hips seems to be "loose" and have a click. We will be having an ultrasound soon to make sure it isn't anything to be concerned about.

Two Months.

I'm 2 Months Old! 
  • I smile a few times a day. 
  • I sleep through the night.
  • I'm happiest first thing in the morning. 
  • I rolled over from my stomach to my back at 7 weeks old, but I think it was a fluke- because I haven't done it since. 
  • I'm just growing out of my newborn clothes and starting to fit 0-3 month clothing.
  • I am fascinated by the hanging objects on my play mat.
What hasn't changed this month? I'm still a redhead.
